Course Overview

Week 1:

Introduction to Lifestyle Medicine and the Whole Food, Plant-Based Diet

This session is an overview of the association between lifestyle and the development of chronic disease. We’ll review the degeneration of the Standard American Diet that got us to our current state of health and the research that supports lifestyle as the first step in treating it. You’ll be introduced to the whole food, plant-based eating pattern with a focus on breakfast makeovers.

Week 2:

A Closer Look at Cardiovascular Disease and Hypertension

There is more to treating heart disease and high blood pressure than drugs alone. This week you’ll learn how to take back control of your heart health. We’ll begin our weekly close-up of different whole-plant foods, and our meal-makeovers this week will focus on lunch and seasoning alternatives to salt.

Week 3:

A Closer Look at Type 2 Diabetes

As one of the fastest growing lifestyle-related chronic diseases in the world, type 2 diabetes is also one of the most preventable. Learn about the prevalence, mechanisms, and how food choices, lifestyle, and weight loss can alter the trajectory of this disease. We’ll continue exploring new whole plant foods and learn how to make healthy snacks. The pantry makeover begins this week.

Week 4:

Shopping Smarter

With our new understanding of the power of whole plant foods, we’ll take this show on the road to Whole Foods Market. Here, we’ll learn how to maximize your healthy shopping experience. We will walk through each section, identifying key foods for the pantry, and take the mystery out of reading labels.

Week 5:

The Diet and Cancer Connection

Your genes don’t necessarily determine your destiny when it comes to developing certain cancers. Many lifestyle elements, including diet, can redefine your risk. Today, we’ll focus on risk-reducing foods, healthy habits, and we’ll show you what’s for dinner!

Week 6:

Putting It All Together

At our final session, we’ll recap what we’ve learned and strategize the next steps. We’ll address supplements, eating out, and tricky social situations. At this point you’ll have mastered the fundamentals of plant-based nutrition, discovered delicious new foods, created some healthy habits, and charted the course of your new roadmap to improved health. We’ll bring dessert!
